Almond & Tofu Fruit Cocktail Dessert Recipe

Or if you’d rather prepare it at home then it’s simple to make whilst looking impressive. It can be topped with an array of summer fruits for a delightfully healthy summer dessert.

Ingredients

  • • Water – 2 cups
  • • Full Fat Milk – 1 cup
  • • Caster Sugar – 2 tablespoons
  • • Jelly Powder - 1½ teaspoons
  • • Ground Almonds – 2 teaspoons
  • • Tinned fruit cocktail or your favourite summer fruits

Method

• Place the sugar and jelly powder in a bowl
• Pour boiling water over the dry mixture and stir until it has dissolved
• Wait half an hour until the mixture has cooled
• Add the milk and ground almonds
• Place in the fridge to set
• Scoop into individual bowls
• Top with fruit cocktail or your favourite summer fruits
