Gelato Alla Stracciatella (Stracciatella Ice Cream) recipe by Danilo Cortellini

Former MasterChef: The Professionals contestant Danilo Cortellini's recipe for Stracciatella Ice Cream from his book 4 Grosvenor Square. Cream fior di latte ice cream with flakes of crunchy chocolate. Stracciatella ice cream is one of the most popular and most-loved Italian ice cream flavours. I believe that this recipe is so good that you don’t need anything else to accompany it!

Ingredients

  • Serves 6 | Preparation Time: 30 Minutes | Cooking Time: 10 Minutes
  • INGREDIENTS
  • 400ml milk
  • 150g sugar
  • 350ml fresh cream, slightly whipped
  • 100g chocolate (55% solid)

Method

Bring the milk and sugar to the boil and let it cool down.
Once cold, stir in the slightly whipped cream and pour the mixture in the ice cream maker. While the ice cream is in the machine melt the chocolate in a bain-marie and after 20 minutes, when the ice cream is almost ready, pour in the chocolate.
The cold ice cream will solidify the chocolate and the movement of the machine will shred it.
Put into the freezer to set for a couple of hours and serve as it is.
