Nata (Dehydrated SCOBY candy)

This actually tastes awesome compared to how it sounds, its caramelised SCOBY, this recipe copes with the abundance you will soon have if you begin to brew regularly. Imagine Kombucha flavoured gummy bears.

Ingredients

  • 1 Large SCOBY around 200g
  • Equal weight of cane sugar
  • 1tsp fresh grated ginger
  • 1tsp fresh grated lemon

Method

Clean SCOBY of excess yeast strands and cut into small cubes.
Combine SCOBY and sugar in a pan and bring up to soft ball stage stirring constantly.
Place on a silpat and bake in the oven at 180 degrees for 10 minutes until lightly caramelised.
