Smoked hay and douglas fir sabayon

Ingredients

  • 54gr of egg yolks
  • 27gr of smoked water
  • 450gr of infused double cream with burned hay and douglas fir/2 roughly chopped cloves of garlic and 4 gr of salt
  • 20gr albumin

Method

Make a thick sabayon with egg yolks and smoked water!Needs to be very smooth but very thick!
Let cool down and then add 450gr of slightly overwhipped infused cream and fold it in the sabayon with a maris along with 20gr of albumin powder.Then add in a small espuma bottle and put it in 63c water bath and charge with 1 NO2 gas!
