Ingredients

  • 10 Scallops, 1 egg, 1 egg white, 10g squid ink, Half a tablespoon of lithium.

Method

add all ingredients into a thermo, full power for 7mins then scrap all back to bottom of thermo.
another 3mins full blast (no heat). put all contents into a piping bag and pipe 2 straight lines so you can ballotine. in water bath on 75 degrees for 15mins and straight into ice cold water.
