avocacdo puree

avocado sits nice with the salmon which was simply s/v 8 mins 55* then blow torched served with compressed cucumbers, raddishes & horseradish snow

Ingredients

  • ripe avocados x1
  • 15g rape seed oil
  • 20g lemon juice
  • 15g glucose
  • maldon sea salt to taste

Method

peel & scoop out avo in to barbell/ blender blitz add glucose, oil , juice pass then season
