- Tbsp olive oil
- Salt

Beer battered courgette flower stuffed with sunflower seed and avacado pesto, charred courgette, carrot and olive oil purée.
This is a great vegan stuffing for courgette flowers, really rich, satisfying and simple. Hope you enjoy!

Method
Toast pine nuts and sunflower seeds and set half a side.
Add half the pine nut sunflower seed mix to a processor and blend until smooth and adjust seasoning.
Mix the rest of the sunflower seeds and pine nuts to the blended mix for texture.
Transfer to piping bag and pipe into courgette flowers when needed.
