Sprouts, Bacon, Toasted Macadamias, Apple Sauce and Crispy Sage.

My favourite festive side dish, also work with and game meat and pork.

Ingredients

  • 500g sprouts, blanched and halved.
  • 100g macadamia nuts
  • 500g smoked bacon lardons
  • Bunch sage
  • Sea salt
  • Veg oil
  • Truffle oil, to serve
  • APPLE SAUCE
  • 1/2 pint scrumpy cider
  • 6 apples peeled and chopped
  • 100g caster sugar
  • Tbsp cider vinegar

Method

Cook the apples in the cider, cider vinegar and sugar until soft, blend till smooth and pass.
In a wok or a large frying pan heat veg oil and fry whole sage leaves till crispy set aside, then macadamia nuts until golden, set aside and season both leaves and nuts. In same pan and oil fry bacon until crispy then add sprouts and could, soaking up the bacon, sage nutty oil.
On a large plate dot apple sauce, layer bacon and sprouts, sprinkle nuts and sage leaves, finish with some truffle oil.
