Ingredients
- Leftover potatoes (mashed or chopped roast)
- Leftover vegetables (cabbage, carrots, parsnips, squash etc)
- Onion, chopped
- Butter
- Fresh herbs (sage, majoram or anything to hand)
- Flour
- Oil or butter for frying
- Eggs, to serve

Recipe
Melt butter in a pan and gently cook the chopped onion and herbs.
Add your leftover vegetables and warm them through.
Mix with the potatoes — use plenty of potato so the mixture holds together well.
Shape into balls and flatten into patties.
Dust lightly in flour.
Shallow fry until crisp, browned and heated through.
Serve with a fried or poached egg on top.
