Curried Root Vegetable Soup

A complete post-Christmas recipe that turns leftover vegetables into mouth-watering dishes.

  • 1 tbsp butter or oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tbsp Madras curry powder
  • 1 tsp ground cumin
  • 800g mixed root vegetables, chopped (parsnips, swede, turnip, carrots, squash or pumpkin - leftovers plus any extras needed)
  • 1-1.2 litres turkey stock
  • Salt and pepper
  • 2-3 tbsp creme fraiche

Method

Method

Heat the butter or oil in a saucepan and sauté the onion and garlic until soft.

Add the curry powder and cumin and cook for 1 minute to release the spices.
Add the chopped root vegetables and stir well.

Pour over enough turkey stock to cover.
Simmer until all vegetables are completely soft.

Blend with a stick blender until smooth.

Season to taste and finish with a generous spoon of crème fraîche.
