- 2g agar agar
- 75ml stock syrup

this was used on a carrot cake with sous vide carrot, butter cream frosting & spiced carrot cake

Method
line a tray or small cake tin with cling film
add stock syrup to carrot juice whisk in agar agar bring to the boil and cook out for 3 minutes pass and check seasoning pour onto filmed tray and chill
