Ingredients

  • 500ml FRESH CHERRY JUICE
  • 6 leaves GELATINE LEAVES - SOAKED AND SQUEEZED DRY
  • SUGAR - OPTIONAL

Method

WARM CHERRY JUICE TO DISSOLVE GELATINE, THEN ALLOW TO COOL COMPLETELY UNTIL COLD.
PLACE ON MACHINE AND WHISK TO AN AIRATED FOAM ( OR PLACE IN A SODA SYPHON A TO MAKE AN ESPUMA.)
WHEN AIRATED, PLACE FOAM ONTO AN OILED REFRIGERATED METAL TRAY AND RETURN TO FRIDGE TO SET FOAM. CUT OUT WHEN SET USING A LIGHTLY WARMED CUTTER.
