Cherry Tomato Vinaigrette

1. LIQUIDISE CHERRY TOMATOES WITH THE WHITE WINE VINEGAR,MUSTARD,SALT

Ingredients

  • 800g RIPE CHERRY TOMATOES
  • 100ml WHITE WINE VINEGAR
  • 30g VILUX DIJON MUSTARD
  • 6g SALT
  • 0.5g COARSE GROUND BLACK PEPPER
  • 300ml OLIVE OIL (PEPE)

Method

1. LIQUIDISE CHERRY TOMATOES WITH THE WHITE WINE VINEGAR,MUSTARD,SALT & PEPPER.
2. SLOWLY ADD THE OLIVE OIL WITH THE BLENDER STILL ON TO EMULSIFY.
3. PASS THROUGH A FINE CHINOIS.
4. REFRIGERATE UNTIL REQUIRED.
