Chorizo & butterbean salad

GENTLY TOSS ALL INGREDIENTS TOGETHER IN A LARGE BOWL SEASON TO TASTE.

Ingredients

  • 1kg TINNED CANELINI BEANS - DRAINED & WASHED WELL
  • 1kg PLUM TOMATOES - CUT INTO 1cm DICE
  • 1 RED ONION - VERY FINELY SLICED
  • 750g CHORIZO SAUSAGE - SLICED 3-4mm THICK ( NON COOKING VARIETY IF POSSIBLE )
  • 1/2 cup CHOPPED FLAT LEAF PARSLEY
  • 1 cup HOUSE DRESSING
  • 1/2 clove GARLIC - CRUSHED
  • 1 tablespoon MILD MUSTARD
  • SEA SALT AND MILLED FRESH PEPPER TO TASTE

Method

DECORATIVELY PLACE INTO A CLEAN SALAD BOWL. - SERVE IMMEDIATELY
