Pine nut parfait, fig, Mulled wine

A tasty Pine nut parfait recipe served with figs and Mulled wine!

Ingredients

  • Poached purple figs
  • 1kg dried Figs
  • 2 bottles Red wine
  • 1 bottle Ruby port
  • 1 fig boiron puree
  • 300g Caster sugar
  • 2 Cinnamon sticks
  • 10 Juniper berries
  • 2 Star anise
  • 1 tsp Fennel seeds
  • 10 Coriander seeds
  • 4 Cloves
  • 6 Orange strips
  • 500ml Orange juice
  • Mulled wine foam
  • 1L Mulled wine
  • 8 gelatine leaves
  • 100g pro~espuma cold

Method

Poached purple figs:
Place all into a pan and bring to a boil.
Boil for 5min and cling film.
Leave to marinate for at least 2 days.
Mulled wine foam:
Heat a little bit of mulled wine and melt the gelatine.
Add to rest of mulled wine and whisk in pro~espuma cold.
