- 2 blocks unsalted butter
- 2 sprigs thyme
- peel of 1 lemon
- salt and pepper

Matthew Barker of The Westwood shares his recipe for roasted whole plaice, dressed in nutty brown butter and served alongside a vibrant cavolo nero pesto and sweet roasted butternut squash.
lemon brown butter
Place the butter, thyme and lemon peel in a saucepan.
Gently heat, stirring occasionally, until the butter reaches a nut-brown colour and develops a rich, toasted aroma.
Pass through a fine chinois.
Season to taste with salt and pepper.
Transfer to a metal gastronorm tray and allow to cool until set.
cavolo nero pesto
Remove the stalks from the cavolo nero and blanch in boiling salted water.
Refresh immediately in iced water.
Once cold, drain thoroughly and squeeze out any excess moisture.
Roughly chop the cavolo nero and place into a Thermomix or high-powered blender with the parsley, Parmesan, pumpkin seeds, garlic, lemon zest and juice.
Start blending and slowly add the olive oil until fully incorporated and the desired consistency is achieved.
Season to taste with salt and white pepper.
Store refrigerated until required.
roasted butternut squash
Peel the butternut squash and remove the seeds and inner core.
Cut into 1cm dice and place on a roasting tray.
Add the garlic cloves and thyme.
Lightly coat with rapeseed oil.
Season with salt and white pepper.
Roast at 190°C, combination oven, 20% steam for approximately 9 minutes, or until just tender.
Remove from the oven and discard the thyme.
Allow to cool completely before transferring to a storage container.
reheat
Gently melt some of the lemon brown butter in a saucepan.
Add the roasted squash and a squeeze of lemon juice.
Warm through carefully, taking care not to break down the squash.
roasted plaice
Prepare the whole headless plaice by removing the skirt, skin and internal organs.
Season lightly with cep mushroom powder and salt.
Heat a medium-hot frying pan and roast the plaice until golden brown on both sides, approximately 2 to 3 minutes per side.
Transfer to a 200°C oven and cook for 8 to 10 minutes, depending on the size of the fish.
finish and serve
Once the plaice is cooked, finish with warm lemon brown butter and spoon over the cavolo nero pesto.
Caramelise a lemon half and serve alongside the fish.
Garnish with red chicory.
