  • 400g Crushed Gingernut biscuits
  • 20 Pieces Purple shrimps (sweets)
  • 200ml Double cream
  • 100ml Coconut milk
  • 50g sugar
  • 4 scoops of vanilla ice cream


Blitz the ginger nut biscuits until they look like sand.
Semi whip the double cream and sugar together with an electric whisk, slowly add the coconut milk and whip until its semi whipped again. Set aside in the fridge for 10min
Use the ginger crumb to form the “sand” and spread the cream to form the “sea”.
Place the shrimps on top of the cream
Serve with vanilla ice cream.
