The Special One (Chicken Burger served in a brioche bun with BBQ sauce)

Ingredients

  • 8 Large Boneless Chicken Thighs
  • 40g Garlic powder
  • 100ml olive oil
  • 4 Bird’s Eye Chilli
  • Pinch of Salt
  • ½ lemon juice
  • 1tsp of tomato puree
  • 1 small red onion thinly sliced
  • 1 onion small head of baby gem thinly sliced
  • 60g of grated goat cheese
  • 4 brioche buns sliced and toasted

Method

Blitz the garlic powder together with the chillies pour in the olive oil and finish with tomato puree and lemon juice. Mix well with chicken thighs and marinade overnight. Grill the chicken for 4 mins on each side. Mix the sliced red onion, the baby gem and the goat cheese and place on the bottom of the toasted bun. Place the cooked chicken in the bun to form the burger. Serve with high quality BBQ sauce.
