Toad in the Hole by Karl Goward

Toad in the Hole by Karl Goward of Adam Byatt’s Bistro Union 


  • Ingredients:
  • 1 Cumberland Sausage Ring
  • 100ml batter
  • 60g Guinness Onions
  • Batter
  • 650g flour (sifted)
  • 73g salt
  • 12 whole eggs
  • 1tblsp black mustard seeds
  • pepper
  • Guinness Onions
  • 30 red onions (lyonnaise)
  • 4 cans Guinness
  • 1 bayleaf
  • 30g salt
  • 1 thyme


Make the batter by combining all the ingredients, beating and straining. Make the Guinness onions by placing all the ingredients into the bratt pan, cook down for 1& ½ hours on 80°C. They should be black and jamlike; not wet.
Colour the sausage ring in the aga pan. Place in the batter around the edge and spoon on the onions. Cook at 200°C for 10 minutes.
