Tortilla Soup

  • Ingredients
  • 800g MAGGI Rich & Rustic Tomato Sauce 3kg
  • 4tbsp Olive Oil
  • 38g MAGGI Vegetable Bouillon Powder
  • 300g Onions finely chopped
  • 1 Flour or corn tortilla cut into small pieces and deep fried or baked
  • 1tbsp Demerara sugar
  • 1.5ltr Water to dissolve the bouillon powder
  • 3 Garlic cloves sliced
  • 1tbsp Fresh Oregano chopped
  • 1tbsp Chipotle purée
  • 400g Mexican beans rinsed and drained


Heat the oil in a large pan and sweat the onions for 10–15 minutes
Add the garlic and continue to cook for a few minutes
Add the chipotle paste, tomato sauce, sugar and oregano. Cook for another 10minutes on a low heat
Add the stock and simmer for another 10 minutes
Blitz in a blender or food processor until smooth
Add the Mexican beans and heat through
Top with the tortilla chips to serve
