Well placed to continue Tom Ryalls legacy of attaining Tillingham’s Michelin Green Star, Brendan Eades has confidently taken the helm as Head Chef.

Brendan Eades brings a wealth of culinary expertise from his previous roles as head chef at the renowned zero-waste restaurant SILO, led by Doug MacMaster, and more recently, The Conduit Club in Covent Garden. Brendan's apprach is felt across the farm as he introduced exciting changes to the restaurant and an expanded bar menu. His culinary vision, deeply rooted in the field-to-fork philosophy, showcases Tillingham’s own livestock, walled garden, and access to exceptional, top-quality ingredients.
