Michelin star Robert Ortiz creates three Peruvian recipes from Lima Floral

Michelin star chef from Lima Floral, Robert Ortiz, creates three current dishes from his menu. The first is Root Pachamanca, which is a selection of fresh root vegetables mainly served raw.
The second dish is Pigeon Crudo, marinated pigeon breast sourced from Wild Harvest and served with tree syrup foie gras and passion fruit.

The last dish is Suckling Pig Eucalyptus, which is lightly smoked and slow-cooked suckling pig, and is from the Christmas menu at Lima Flora.
