L'Auberge de l'Ill – The Haeberlin Family
Over 150 years ago, on the shores of the Ill river, in a tiny village called Illhaeusern, which means “houses along the Ill” in Alsatian, the Haeberlin family opened a small country inn, all the while maintaining a working farm. In the kitchen presided Marc Haeberlin's great grandmother who later transmitted her talents to his great aunt Henriette, assisted by her sister-in-law, Marthe Haeberlin, who specialized in desserts and pastries. Until the very end of her life, Henriette taught the family the love for precision and a job well done.Uniting effort and skill, Marc Haeberlin's father, Paul, and his brother, Jean-Pierre, transformed the little inn into a gastronomical temple. As of 1952, they had earned their first Michelin star. In 1957 came the second star, and, at last, in 1967, the consecration of the third star, crowning their years of hard work. To date: 43 years and 3 stars.Marc Haeberlin belongs to the 4th generation of chefs. He trained at the cooking school of Strasbourg, then honed his skills alongside such prestigious chefs as Paul Bocuse, Jean and Pierre Troisgros, René Lasserre, Gaston Lenôtre... before coming back home to join his father and uncle at the Auberge de l'Ill in 1976. For Marc Haeberlin, absolutely every single thing must be perfect, from the dishwashing to the dish presented to the customer. The three stars should reflect everything: the reception, the garden, the correspondence. This is an ethic that has its rewards. The loyal customers, some for three generations, come from not only Alsace, but also the United States or even Japan.
