- 12 whole eggs
- 1tblsp black mustard seeds

- 30 red onions (lyonnaise)
- 4 cans Guinness
- 1 bayleaf
- 30g salt
- 1 thyme

Preparation:
Make the batter by combining all the ingredients, beating and straining. Make the Guinness onions by placing all the ingredients into the bratt pan, cook down for 1& ½ hours on 80°C. They should be black and jamlike; not wet.
Method:
Colour the sausage ring in the aga pan. Place in the batter around the edge and spoon on the onions. Cook at 200°C for 10 minutes.
