Adam Stokes is a gifted British chef who has held a Michelin star since 2012. His restaurant Adam’s is in the centre of Birmingham, one of only four establishments in the city to have a Michelin star when his was awarded.

Biography

Adam was born in 1981 in the Midlands and grew up in Lincolnshire, later studying a diploma in Hotel, Catering and Institutional Management at Stamford College from 1998 to 2000. After finishing his studies, Adam worked as a sous chef at Hambleton Hall in Rutland from 2001 to 2008. This hotel with a Michelin stared restaurant gave Adam excellent early experience of working in the fine dining environment, being trained by Aaron Patterson who imparted his knowledge of French cuisine. During his time at Hambleton Hall he travelled to London to work a stage at the well-known Pied a Terre. Later on, he developed his restaurant and people management skills too, something which set him in good stead to move on to his next role.

 

Aged only 27, Adam replaced head chef Matt Weedon at Glenapp Castle, South Ayrshire in 2008, which

was his first job as a head of the kitchen. He won the Gourmet Menu of the Year Scottish Chef Award in 2009 and the Catering in Scotland Restaurant of the Year award in 2011. After five years honing his trade at Glenapp Castle, his ambitious nature led him to open his own restaurant with his wife Natasha in Birmingham.

Located in the historical heart of England’s second city, a sandwich shop was converted into Adam’s fine dining restaurant, which caused its own set of challenges that Adam and his wife had to overcome.
Offering a la carte dining as well as two tasting menus of five and nine courses and vegetarian options, Adam’s has received much critical praise since its recent opening, culminating in the awarding of a Michelin star after only five months. The Bennetts Hill site was conceived originally as a temporary pop-up restaurant, with a more permanent base being sought after.

 

 

Adam closed the site in December 2015 and reopened a permanent, larger venue in Waterloo Street in January 2016.

In 2017 Adam announced the appointment of head chef Tom Shepherd, his previous experience includes two Michelin-starred Restaurant Sat Bains and the Latymer with Michael Wignall.

 

Awards and accolades

Adam’s received its star in the Michelin Guide in 2012, which it still retains today. The British fine dining establishment also has 3 rosettes from the AA Restaurant Guide and in 2017 it was listed at number 43 in Waitrose’s Good Food Guide’s top 50 restaurants for 2018.
