Biography

Chef Berwyn Davies, originally from North Wales, joined the team at The Glasshouse as sous chef in 2012 taking over as head chef in the summer of 2013. Prior to this Berwyn had previously taken up positions at other high end restaurants including Tyddyn Llan, Odettes and The Glasshouse’s sister restaurant, La Trompette also part of Nigel Platts-Martin and Bruce Poole's restaurant collection.

Throughout his career Berwyn has travelled extensively both in and outside of the UK. His travels across India, the far east, New York and Australia have highly influenced the chef and the menu at The Glasshouse to help him produce dishes infused with flavour which are flawlessly executed.

The Glasshouse

Co-owned by Nigel Platts-Martin and Bruce Poole, the team behind acclaimed London restaurants Chez Bruce and La Trompette, The Glasshouse officially opened its doors in 1999 in Kew, Richmond, London.

Three years later the modern British restaurant achieved its first star in the Michelin Guide UK, an accolade it still retains to this day. Despite the awards the restaurant insists that remains a ‘neighbourhood and local restaurant’ which provides cuisine served in a ‘warm and relaxing environment.’

Other interests

Berwyn is a keen fisherman and also enjoys shooting season which can explain his use of game throughout the menu at The Glasshouse when it’s the right season. In 2016 the chef also represented the UK at The Festival Culinaire Bernard Loiseau following in the footsteps of his mentor Bruce Poole who had previously represented the UK at the festival. Berwyn was the first Welshman to take part in the festival.
