Along his culinary journey, Liam has developed a profound interest in wine, and he aims to bring his newfound passion and knowledge to elevate the dining experience at STORE, the restaurant he now proudly calls home.

Liam helped win one Michelin Star for the restaurant, after the Store at Stoke Mill opened just two years prior, following the release of the Michelin Guide 2023.

What the guides say...

three stars

The Store at Stoke Mill

Store at Stoke Mill, located in the picturesque city of Norwich is a culinary gem renowned for its exquisite menu and meticulous attention to detail.

Housed in a beautifully restored 19th-century mill building, the restaurant seamlessly blends old-world charm with contemporary elegance.

Led by Head Chef Liam Nichols, Store at Stoke Mill boasts a menu that celebrates British produce and seasonal ingredients.

Liam's extensive culonary experience results in captivating dishes like pan-roasted scallops with samphire and crab bisque and slow-cooked venison with heritage carrots and juniper jus. Vegetarian and vegan options, such as roasted cauliflower with spiced lentils and charred kale, are equally imaginative.

The restaurant's ambiance is warm and inviting, featuring exposed brick walls, timber beams, and captivating river views. The attentive and knowledgeable staff provide exceptional service, ensuring a memorable dining experience. The sommelier-curated wine list complements the flavors of the dishes, offering an impressive selection of wines from around the world.

In March 2023, after just opening two years prior, Store at Stoke Mill was awarded one Michelin star at the Guide's annual awards ceremony

The restaurant has also received recognition from other esteemed publications, further solidifying its status as a premier dining destination.
