Biography

Stephane grew up in Agen and began his apprenticeship at La Tupina in Boredeux before moving to London in the 1990s. He spent seven years training with the acclaimed Michel Roux at his three Michelin starred, The Waterside Inn in Bray. His three Michelin starred training helped develop Stephane’s passion for flavour as well as excellence and dedication to his trade.

He then went onto work for Raymond Blanc at his Michelin starred Le Manoir Aux Quat Saisons which was followed with a private chef position for Sir Anthony Bamford at Daylesford House before eventually opening the Herbert Arms at Chirbury with his wife Sarah and her sister Kathryn in 2008.

In 2011, just 18 months after taking the helm of The Herbert Arms, the team moved to Montgomery after hearing about the Checkers. Within just seven months of opening The Checkers the restaurant was honoured with a coveted star in the Michelin Guide in October 2011 which it still holds today making it only one of seven restaurants in Wales to hold the accolade along with Walnut Tree, Llanddewi Skirrid; Sosban and the Old Butchers, Menai Bridge; Tyddyn Llan, Llandrillo; Ynyshir Restaurant and Rooms, Machynlleth; Restaurant James Sommerin, Penarth; the Whitebrook, Monmouthshire.

Stephane’s wife and pastry chef, Sarah is an accomplished chef who has spent many years working in the country’s finest kitchens alongside the finest chefs. She went on to establish herself as a freelance chef working across UK and Europe for private clients. Sarah and Stephane now have three young daughters, who each of course share the same passion for cooking.

Food style

The family run restaurant with rooms is typically inspired by French cuisine with the a la carte menu offering an abundance of seasonal flavours. Firmly rooted in tradition, Stephane’s food also showcases his influences from throughout his career ranging from his time spent working with Michel Roux to Raymond Blanc taking him under his wing.

Other interests

Stephane published his first book, The Frenchman and the farmer’s daughters, in 2016. In late November 2017 it was announced that the Grade-II listed former coaching inn had been put on the market. Stephane and the team have yet to announce their future plans.
