Chef Career Advice

Based on his extensive experience working within the Culinary Industry, Michelin Star Chef, Michael Wignall offers his advice to aspiring Chefs in an attempt to help them on their journey up the career ladder:

My advice to anyone that is leaving college would be obviously realising what it is you want to do, what direction you want to go, you know if you want to do brassiere or whatever put yourself somewhere that is really good, somewhere where they are going to give you the backing and support that you need. I think a young Chef can expect a lot more support than when I was going through ranks, I think things have changed for the better, we sort of think we wrap people in cotton wool a bit too much now.

The best bit of careers advice that I have ever had was probably work clean, think about what you are doing don't rush things, you can't when you are young, you will want to do things as quickly as you can but you just can't do it, if you haven't got the skill level read a lot of experiences, as many different food cultures as you can and enjoy it.

When someone applies for a position with ourselves we are looking for someone that just wants to learn and that is dedicated and wants to put the hard work in irrelevant of what experience, they've had 2, 3 Michelin stars 1 Michelin star wherever they have worked you know I've had some cracking CVs from people like that, but actually they can't really turn out that great you know, it's just all about the attitude and having a really good attitude and wanting to learn and wanting to progress in their career.
