Nick Nairn steps away from Kailyard at Dunblane Hydro
Chef and television personality Nick Nairn has ended his long-running partnership with Apex Hotels at the Kailyard restaurant at Dunblane Hydro Hotel, bringing a 16-year chapter to a close.
The decision, described by both parties as mutual, comes as Apex Hotels prepares to reimagine the future of the restaurant as part of a wider refurbishment of the hotel. Plans include a new concept, name and design, with further details expected to be announced in early 2026.
Nick has led the Kailyard since its launch, playing a central role in shaping the restaurant’s identity and reputation, particularly through its emphasis on local produce and Scottish ingredients. Over more than a decade and a half, the restaurant became a key part of the Dunblane Hydro offering under his stewardship.

A new focus for Nick Nairn
Nick said the decision would allow him to refocus his attention on his existing businesses in Port of Menteith.
He said: “I’m very proud of all the Kailyard has achieved. However, it’s time for me to focus exclusively on the restaurant and cook school in Port of Menteith. I wish only the best for the Dunblane Hydro and the team.
“I’ll be a very interested onlooker as Apex invests in and improves the hotel. I believe it’s in good hands and I look forward to visiting as a guest.”
Continuity in the kitchen
While the
restaurant moves into its next phase, continuity will be maintained in the kitchen. Brian Scanlin, who has worked alongside Nick at the Kailyard for many years, will remain in place as executive head chef.
Apex Hotels said Brian will provide stability while also helping to shape the restaurant’s new creative direction as the concept evolves.
Apex Hotels outlines next chapter
Paul Mooney, area general manager for Apex Dunblane Hydro, paid tribute to Nick’s contribution while looking ahead to the redevelopment plans.
He said: “Nick’s influence on the Kailyard and on the wider food scene in central Scotland has been remarkable.
“As we embark on an exciting new era for the hotel, the evolution of our restaurant is a key part of our wider vision. With Brian remaining as executive head chef and a new concept in development, there is a great deal to look forward to.”
Looking ahead
Apex Hotels confirmed that the refreshed restaurant will form part of a broader refurbishment of Dunblane Hydro Hotel. Further announcements, including the restaurant’s new name, menus and design direction, are expected in early 2026.
For now, the departure marks the end of a significant partnership, while setting the stage for both Nick Nairn and Dunblane Hydro to move forward with clear but separate focuses.
