How to create a Wild Atlantic Prawn with chicory and apple dish

Today we're working on some recipes with wild Atlantic prawns beautiful product, nice and sweet, subtle flavour, nice soft texture and often comes in the frozen products so really important to make sure you treat it right, defrost it in the fridge with some paper towel, don't run them under a warm tap in the sink or anything like that you’ll just wash all the flavour out of them and that's partly where this dish comes from these subtle flavours.

So I've got some yogurt, we've got some nice sharp apple and we’re just going to peel the apple and do some diced apple, a few chives in there, a little bit of seasoning, just a little bit of lemon zest and then a squeeze of juice and then just blend that together, we’re going to put our apple into that and then that’s ready to add our chicory to it and this is the heart of the chicory.

I’ve taken the outer leaves off to make a serving vehicle for this dish and then just chopped the hearts up, fairly finely sliced them and then our prawns, we are just going to add a little bit of seasoning and just a tiny squeeze of lemon juice and then we can use the leaves if you just cut the ends off it gives you almost like a handle as a spoon, tiny little slice off the bottom and that help them stand up on your plate and then just a nice mound of the Apple mix in the bottom and then top with the prawns, so that's our wild Atlantic prawns with chicory and apple, in a light yogurt lemon dressing.
