Nokx Majozi named chef in residence at Fallow
Fallow has announced the appointment of Nokx Majozi as the restaurant’s first Chef in Residence, marking a significant development for the group led by Will Murray, Jack Croft and James Robson - the team behind Fallow, FOWL and Roe.
Nokx, formerly the acclaimed head pie maker at Holborn Dining Room, joins the flagship restaurant to collaborate closely with Will and Jack on a dedicated programme centred on craft, nose-to-tail cooking and menu innovation.
In a message shared with industry peers, Nokx reflected on “an incredible journey” at the property, where she has led the Pie Room team since its inception.
Over the past eleven years, she worked alongside colleagues united by what she described as a “passion for culinary excellence,” while helping to mentor the next generation of chefs.

A New Strategic Role for Fallow
The position of chef in residence represents a first for Fallow and has been created to welcome chefs with specialist skills into the kitchen for a defined period. The aim is to bring additional expertise, fresh thinking and new disciplines into the existing framework of the restaurant.
In selecting Nokx to inaugurate the programme, Fallow has chosen a chef widely recognised for her precision, technical excellence and deep understanding of traditional pastry methods.
Menu Development: Pies, Pâté en Croûte and Seasonal Craft
During her residency, Nokx will lead on the development
of a regularly changing pie offering, leveraging the skills that earned her national acclaim. She will also introduce a Pâté en croûte and collaborate on a number of new dishes for the main menu.
Her contribution is designed to integrate seamlessly with Fallow’s existing culinary direction, while adding a distinct layer of technique and craftsmanship that reflects her background.

Supporting and Advancing Fallow’s Nose-to-Tail Ethos
Fallow has long championed a resourceful, whole-animal approach, and Nokx will play a key role in progressing this philosophy.
Working alongside the senior kitchen team, she will lend her expertise to the restaurant’s whole-animal butchery programme and support the expansion of Fallow’s house-made charcuterie, ensuring each part of the animal is used thoughtfully and creatively.
This collaboration reinforces the brand’s focus on sustainability and ingredient stewardship - values central to the work of Will, Jack and James.
