Simon Ulph named executive head chef at new Michael Caines restaurant
The Stafford London is preparing for an exciting milestone this September as it opens a brand-new restaurant in collaboration with Michelin-starred chef Michael Caines MBE.
The launch will bring Michael’s signature cooking - rooted in seasonal produce, precise craftsmanship and bold yet elegant flavours - to the heart of St James’s.
Michael spent 21 years at the helm of the two Michelin starred Gidleigh Park before his departure in 2016 to pursue a new venture, the country retreat, Lympstone Manor in Devon.
He and the team achieved their first star for the country retreat in the Michelin Guide UK 2018.
Michael has also appeared on numerous television shows including Saturday Kitchen and MasterChef: The Professionals. In 2006 Michael represented the South West of England on the first series of BBC2’s Great British Menu where the Michelin-starred chef made it through to the final of the show.
A New Culinary Chapter with Simon Ulph
At the centre of this opening is Simon Ulph, who has been appointed as executive head chef. Simon recently joined Michael Caines’ flagship property, Lympstone Manor in Devon, and will now take the reins of the kitchen at The Stafford London’s upcoming restaurant.
Known for his refined, produce-led approach, Simon will be working hand-in-hand with Michael to develop menus that celebrate British ingredients
and embody the level of quality both Michael and The Stafford are renowned for. His role will be crucial in translating Michael’s culinary vision to a London audience while ensuring every dish feels true to its seasonal and sustainable roots.
Front of House Led by Familiar Talent
The restaurant’s front-of-house will continue to be overseen by Luca Gaeta, who has been with The Stafford London for over 15 years as restaurant manager of The Game Bird. Luca’s deep understanding of the hotel’s style of hospitality and his commitment to flawless service make him an integral part of this new chapter.
To prepare for the opening, Luca and members of The Stafford’s team spent time at Lympstone Manor learning first-hand from Michael’s Devon team.
“A Truly Outstanding Opening”
Commenting on the appointments and upcoming launch, John McLean, managing director of the Stafford Collection, said: "We’re thrilled to welcome Simon to the team and have him lead this exciting new chapter at The Stafford. His appointment, combined with the wealth of experience from both our in-house team and Lympstone Manor, sets the stage for a truly outstanding restaurant opening. We’re looking forward to sharing Michael Caines’ remarkable food and hospitality with our guests here in London.”
