How to make a basic chocolate sauce

So in this video, we’re going to make chocolate sauce. So in the pan here we have caster sugar, water and a bit of cocoa powder and on the side for a bit later we have some whipping cream, I’m going to place the pan up on the stove, medium heat and gently bring the three ingredients we’ve got in here together using a whisk, so once everything is together, nice and smooth and you’re going to bring it up to the boil, once it’s boiling we’re going to cook it for approximately 5-6 minutes on a medium heat to thicken the sauce and to cook out the cocoa powder.

Okay so now the sauce is boiling it’s very important to keep whisking it every now and then to make sure it doesn’t catch on the bottom of the pan, make sure you’ve got the heat set on a medium heat and just let it cook down for 5-6 minutes. We're at this stage which we are going to add the cream, pour the cream in slowly and whisk it in and were going to bring that up to a boil again and cook the sauce until we reach the right consistency once again it’s probably around 5-6 minutes.

Okay now at this stage, the sauce has come back up to the boil, so it’s important to keep it moving making sure it doesn’t catch on the bottom and we are just going to cook it until we reach the right consistency on the sauce that we’re looking for. Okay so now our sauce is ready we are going to pull it off the heat pass it through a chinois into a clean bowl, cover the bowl with cling film and put in the Chiller to cool down and then we have our finished chocolate sauce.
