How to make crème Chantilly

The Staff Canteen

Chef skills

A step by guide to making a basic crème Chantilly, from Simon Jenkins, pastry chef for Marcus Wareing restaurants in London. This is quick and simple easy to follow recipe and is used as a basic preparation for young Chefs and industry professionals as part of their basic training.

I'm going to show you a simple creme Chantilly, in the bowl we have whipping cream, caster sugar and vanilla extract. We take a medium sized whisk and whisk in  a figure of eight motion, keep it nice and steady.

When you get to the correct consistency you are looking for this is something which can be used as a garnish for a tart or to use with fresh fruits.
