Bio: Paul Graham is the Group Bars Manager for the Gordon Ramsay Group. Paul started his career in 2006 at an espresso and wine bar in Melbourne. Edinburgh born Paul has never looked back, and fast became a real contender within the industry. Now Paul is bringing his skills and talent to the bar at Bread Street Kitchen.

Paul Graham takes us through his personal experiences whilst being in the Culinary Industry. These key skills that young Chefs and industry professionals learn as part of their basic training.

How long have you been in this role?

9 years.

What advice would you give to someone just entering into the industry?

Ask as many questions as you can, read as many books as you can get your hands on and have fun! 

What experience and how many years in your opinion would someone need in order to progress to the top level of the industry?

I'm not sure you can get to the top. And if you think you do then keep learning and pushing things forward. That's what's so great about our industry, it never stays still and the people at the top don't rest on their laurels.

What are your ultimate top five tips for someone looking to start a career in the hospitality sector?

 Go out and eat and drink in as many bars and restaurants as you can, meet as many people along the way as possible. Don't take yourself too seriously, always help out newer and younger people and don't expect too much sleep - it's a proper 24/7 gig.

What are you looking out for on a CV or in an interview if someone was applying to work with you?

 I always look for personality and presentation. We can train you to do everything else.
