How to make a balsamic dressing

Okay, we are going to make a balsamic vinegar and olive oil dressing. First of all I'm going to start with a tablespoon of water, I've got some sugar and some fine sea salt, couple of twists of finely milled black pepper, a little drop of fresh lemon juice and we are going to give that a little whisk just to start the salt and sugar dissolving, add 2 dessert spoonful’s of sherry vinegar and some good quality

balsamic vinegar using the water and the sherry vinegar to slightly let down that thicken balsamic, the aged balsamic that's our acid-base now we are going to add some good quality olive oil, so 4 parts olive oil to our vinegar, see that the balsamic vinegar there is a slight body to the dressing as well and then there is our balsamic and olive oil dressing.
