Make a basic Vinaigrette dressing

We are going to make a basic vinaigrette dressing, so first a little damp cloth to hold our bowl in place and start with some mustard we are using a dijon mustard here, using half a dessert spoonful, seasoning, black pepper, couple twists of black pepper and some fine sea salt we add that at the beginning, little whisk start breaking that salt and that pepper down, good quality white wine vinegar and we are looking for standard ratio of 3 to

1 generally as a rule of thumb okay, now pretty much can use any kind of oil you want for this dressing any good quality oil I'm mixing two a sunflower oil and an olive oil in 50 - 50 because I find this particular basic vinaigrette olive oil can be a little bit strong and that there is our basic vinaigrette dressing, we can flavour that with herbs, some lemon or mustard but there is a basic vinaigrette.
