- 3 Passion fruits
- 1 Mango cut into small cubes
- 10 Lychee cut into quarters
- ½ Lime Zest
- 10g Sugar
- 150g Mango Puree
- 5g Lemon Juice

Method
Cook the flesh of the passion fruit for a few minutes to thicken –
Pour over the prepared Mango and Lychee
Stir in the lime zest and sugar
Combine the mango puree and lemon juice
Mix all ingredients well together – chill until ready to use
