Avocado Sorbet

Avocado Sorbet by Richard Bainbridge

Ingredients

  • Serves 6
  • 100gms sugar
  • 100mls water
  • 2 ripe avocados
  • Juice of one lemon
  • The grated zest and juice of 2 limes

Method

Place the sugar and water into a saucepan and over a low heat allow to dissolve. When the sugar has dissolved bring up to the boil and then remove from the heat and allow to cool.
Peel the avocados, slice roughly and place into a bowl with the lemon juice and mix well.
Place the cooled sugar syrup, avocado flesh and lemon juice together with the lime zest and juice into a liquidiser and blitz until really smooth.
Churn in an ice cream machine and store in a suitable container in the freezer.
