- 250g chicken wings
- 1 onion chopped
- 3 shallots chopped
- 1 head of garlic
- Thyme and bay leaf

Gravy
Heat a pan and add a little oil roast the onions and shallots add garlic then herbs last.
Roast of the chicken wings in a tray in the oven till brown. Take the wings and then add the the onion pan .
Add red wine and port 200 ml of each and reduce to a glaze. Then take the pan of wings deglaze with more red wine and an oxo cube add water and scrape the sediment of the pan and add all of this to the onion pan.
Cover this all with chicken stock and cook for 45 mins then pass into a clean pan and reduce till you have a delicious gravy.
