- 1 (680g) salmon fillet
- 125ml chives, chopped
- 2 cloves of garlic, crushed
- 60ml olive oil
- 45ml pure maple syrup from Canada
- 15ml soya sauce
- Juice of 1 lemon
- Salt and pepper, to taste

Method
This recipe will make 4 portions of maple infused salmon.
Preheat the barbecue on a medium heat.
Cut the salmon into 4 equal parts.
In a bowl, combine the chives, garlic, olive oil, maple syrup, soya sauce and lemon juice and season well.
Baste the salmon with the marinade and then refrigerate for 15 minutes.
Grill salmon for 3 to 4 minutes on each side (or until desired doneness).
This recipe also works well with swordfish and trout.
