Mexican Chicken Tortilla with using MAGGI Southern Fried Crunchy Bake and MAGGI Rich & Rustic Tomato Sauce

Ingredients

  • Ingredients:
  • 10 chicken breast portions (60g for primary)
  • 1 large egg, beaten
  • 100g MAGGI® Southern Fried Crunchy Bake
  • 10 Small 6” flour tortillas
  • 500g 5-bean salad
  • 100g shredded lettuce
  • 100ml sour cream
  • 250ml salsa, see recipe below
  • For the salsa:
  • 200g MAGGI® Rich & Rustic Tomato Sauce
  • ½ red pepper, finely diced
  • ½ green pepper, finely diced
  • ½ yellow pepper, finely diced
  • 50g cucumber, finely diced
  • ¼ tsp chilli flakes
  • 10ml olive oil
  • 10g fresh coriander chopped
  • Black pepper, to taste

Method

Method:
Dip the chicken in the egg to coat. Press firmly into the Crunchy Bake breadcrumb and mix until all sides are well coated. Place the portions on a preheated, parchment lined, baking tray and bake for 10-25 minutes, depending on portion size, in an oven set to 200˚C (fan 180˚C). Ensure the chicken reaches a minimum core temperature of 75˚C.
For the salsa:
Chop all the ingredients into a fine dice and mix together. Allow to stand for at least 10 minutes. Lay the tortillas out flat and place 50g 5-bean salad and sliced Crunchy. Bake chicken in the centre of each. Top with shredded lettuce, sour cream, and salsa and serve open.
