- 800g uncooked quinoa, rinsed
- 1600ml water
- 2tbsp MAGGI Vegetable Liquid Concentrates
- 2 lemons, juiced
- 3tbsp olive oil
- 250g cherry tomatoes, quartered
- 1 cucumber, deseeded & diced
- 100g spring onions, finely chopped
- 75g fresh parsley, finely chopped
- 75g fresh mint, finely chopped

Rinse the quinoa and place in a pan with the water and vegetable liquid concentrates. Bring to the boil, cover, reduce the heat, and gently simmer for 10-15 minutes.
Remove from the heat and leave to cool slightly for 5 minutes before uncovering the quinoa. Fluff the grains with a fork and stir in the lemon juice and olive oil.
Stir in the tomatoes, cucumber, spring onions, parsley and mint before serving.
