Roast salmon, honey crème fraiche, peas

A popular choice due to its versatile flavour, salmon is a delicious addition to any recipe. Put your culinary skills to the test with the following Roast salmon, honey crème fraiche, peas recipe. Simple flavours to gather succulent fish with sticky sweet honey and crunchy toast. Salmon is very popular in our restaurants and I have previously used it as a starter for HM Queen

Ingredients

  • The Shopping list for 10:
  • 150grm salmon and seasoning
  • 3 tsp crème fraiche
  • 2 tsp clear honey
  • Tsp lemon juice
  • 1 brioche finger roll
  • Handful of shelled peas and pea shoot

Method

In the Kitchen:

Place your salmon fillet onto a foiled baking tray, season and drizzle with a little olive oil and fresh lemon juice, roast for 10 minutes, pre-heated oven at 170 degrees.

Remove and brush the salmon with clear honey and rest at room temperature for 30 minutes.

Cut your brioche into thin slices and place onto a foiled tray, bake at 165 degrees for 3 minutes.

Remove and leave to go cool and crunchy

Spoon the crème fraiche onto the toast, pick small pieces of the salmon and place on top.

Drizzle with clear honey and decorate with shelled peas and pea shoot herbs
