Spiced Lamb Skewers

  • 5tsp ground cumin
  • 5tsp fennel seeds
  • 2tsp dried chilli flakes
  • 2tsp paprika
  • 15mldark soy sauce
  • 25ml groundnut oil
  • 25ml MAGGI Beef Liquid Concentrate Fonds
  • 25ml dry sherry or rice wine vinegar
  • 1kg lamb fillet, finely sliced and cut into 2cm squares
  • 2tsp sunflower oil
  • 40 wooden skewers
  • Rice noodles and spring onion salad, as required
  • 15ml toasted sesame oil


Soak the skewers in water for about 20 minutes.
Combine all the seasoning ingredients in a large bowl. Add the lamb and coat in the spice mix. Thread the meat onto the skewers.
Heat a griddle pan over a high heat and drizzle the sunflower oil over the lamb. Place the skewers in the pan and cook until browned.
Place 4 skewers on to each plate and serve with rice noodles and spring onion salad.

Cook the skewers on a barbeque for an irresistible smoky flavour.
Serving Suggestions
Serve the skewers on top of a lightly soy and sesame oil dressed leaf salad with orange segments.
