Soak the skewers in water for about 20 minutes.
Combine all the seasoning ingredients in a large bowl. Add the lamb and coat in the spice mix. Thread the meat onto the skewers.
Heat a griddle pan over a high heat and drizzle the sunflower oil over the lamb. Place the skewers in the pan and cook until browned.
Place 4 skewers on to each plate and serve with rice noodles and spring onion salad.
