Scotch Beef sirloin steaks ordering specifications

Master butcher Viv Harvey talks us through the variation of possible specifications when ordering and delivering a Scotch Beef sirloin steak. The steaks are:

1-full in trim sirloin
2-long tail removed
3-Short tail back strap removed
4-Short tail back strap and chain muscle removed
5-D cut sirloin
As a chef it's important to make sure you order the correct specification and work with your butcher to achieve this.
