Michelin-starred chef Michael Smith, talks about his passion for the Isle of Skye, it’s challenges, but equally it’s huge rewards; such as the quality of both shellfish and the Scotch Lamb. Both of which form a large part of his menu at the Three Chimneys, a restaurant situated on the north-west tip of Skye. Michael has been part of the team at the restaurant for over ten years gaining a Michelin star in 2013. The Isle of Skye and the produce it supplies are key to Michael’s cooking and the menu at the restaurant.
