Trio of Scotch Lamb from Jak O’Donnell, The Sisters Glasgow

Jak O’Donnell, Chef Patron of The Sister restaurant in Glasgow, cooks Trio of Scotch lamb with Scotch lamb saddle, shoulder and bon bons made with braised Scotch lamb shank.
The lamb shoulder is braised slowly in the oven for a number of hours, then flaked, rolled and set. The saddle is cooked pink and the bon bons are flaked and bound by lamb jus coasted in bread crumbs and deep fried. This is served with pearl barley, fresh cabbage and lamb jus.
