Born in Rochdale, Sam honed his culinary skills at the renowned Edinburgh New Town Cooking School before securing a position at the highly acclaimed Castle Terrace, under the tutelage of chef Dominic Jack.
Within a remarkable span of less than two years, he rose from commis to sous chef before the restaurant sadly closed its doors.
Sam's exceptional talent earned him a coveted spot in Code's prestigious 30 under 30 class for 2023/24, recognizing him as one of the most promising young chefs in the United Kingdom.
The fates of Sam Yorke and Tomás Gormley intertwined during their tenure at Seasons, a Michelin Guide-listed establishment (now closed).
Tomás brings an equally impressive culinary background to the table, having honed his skills in some of the nation's most beloved restaurants.
He lent his expertise to the now-closed Le Roi Fou, the esteemed two-star Andrew Fairlie at Gleneagles, and 21212 during its Michelin-starred era.
Together, Sam and Tomás form a dynamic duo, channeling their collective experience and passion for gastronomy into creating extraordinary dining experiences.

Heron, the brainchild of young chefs Tomás Gormley and Sam Yorke, takes the baton from their highly acclaimed gourmet pop-up, Bad Seeds.
With an open-plan layout, the restaurant offers elevated seating to maximize the picturesque views of the Shore, along with a welcoming bar that entices guests to explore its extensive drinks selection.
Despite the concise menu, the dishes are carefully crafted, boasting top-notch ingredients and innovative pairings that justify the "fine dining" label.
Guests can expect hand-dived Orkney scallops atop a bed of refreshing cucumber and grape, as well as roast beetroot adorned with flaked almonds, as well as agnolotti in a pumpkin broth, and raisin-stuffed partridge accompanied by a delectable pancetta-topped brioch.
Amidst the enchanting backdrop of shimmering waterfront lights, it is the staff who truly imbue Heron with its soothing ambiance.
General Manager Glen Montgomery, previously a head sommelier, possesses an extensive and diverse knowledge of beverages, offering exceptional pairing recommendations.
